APPLE HARVEST ALE is a collaboration brew with local neighbor, BEAK & SKIFF ORCHARD. This ale was made with 800 gallons of fresh pressed cider from Beak & Skiff's family grown Empire and Honeycrisp apples. Apples grown there, beer made here!

This four time Great American Beer Festival winner and one time World Beer Cup winner is Pale yellow in color and has the flavor of a light German pilsner, crossed with the crisp cleanness you might find in an American Ale. Skinny Atlas is named for Central New York's Skaneateles Lake from which Empire draws its brewing water.
Slo Mo' IPA
Slo Mo' is a true American IPA brewed with a blend of Falconer's Flight and Mosaic Hops to convey bright tropical citrus notes for a crisp dry finish.

This innovative and one of a kind East meets West beer is a truly unique experience. Combining American craft brewing techniques with the history and precision of the Jing Wei Fu Tea producers (Southern Shaanxi in China), we've created a beer like no other. Nugget hops and our house ale yeast start this beer off with fruity aroma. The flavors are then a blend of subtle malt and a full earthy tea flavor with a dry finish.
White Aphrodisiac, or White "Aphro" is a Belgian-Style unfiltered Wit Ale. Featuring the perfect balance of Pilsner and Wheat Malt this beer incorporates Hallertauer Hops, lavender, ginger and lemon peel.
This has a Pilsner base and is brewed with the addition of NYS Concord grapes. It is fruity, tart & dry, w/ a dark purple color & huge grape aroma.
Empire's collaboration brew with Syracuse neighbor Cafe Kubal. This Scotch Ale is infused with a custom blend of Guatemalan beans. The coffee notes compliment the slight sweetness of the style very nicely.
Particle City DIPA
A New England Style double IPA brewed with 20% flaked oats and a generous amount of pale malt. Hopped with Citra and Mosaic hops at a rate of 5 lbs. per barrel, this hazy, fragrant ale focuses on late whirlpool additions and a three stage dry hop.
At a Brooklyn beer event in October of 2014, 5 friends decided to join forces in a unique beer collaboration by beer industry women. The brew was so successful that the tradition has continued each year since!
This imperial stout is brewed and fermented with cocoa nibs and a special chili blend, giving it a tantalizing chocolate aroma, and flavor with a heat that creeps onto the palate and builds into a beautiful balance of sweetness and spice. 8.2% ABV
Worst Day IPA
Worst Day IPA is proof that good things come from bad days. Power outage, check, stuck mash, check, automation glitches, check. After all that, we decided to make a good thing out of a bad day. A generous Citra dry hop addition gives this beer a bright hoppy nose. With a medium IPA body and a mild malt sweetness, this tasty brew reminds us that every grey cloud has a silver lining.
Black Magic Stout
A traditional dry Irish stout, carbonated with nitrogen (it pours very much like a Guinness). Dry roasted flavors are prominent, with hints of chocolate and coffee on the finish.
Liv & Let Rye
30% Rye malts give this IPA a spicy, peppery kick. The hops include: Nugget, Citra, and Falconers Flight.
This is a traditional German style Mai-Bock. These beers are brewed toward the end of winter for spring release. This is a true lager, made with German lager yeast and fermented for six weeks. The flavors are malt forward with a medium body, finishing with a dry peppery flavor that is derived from the hops.

American Strong Ale
This ale is bold, hoppy, and complex with chocolate and roasted malts adding a full malty character. The strong American hops balance the beer with an aggressive bitterness, followed by a fruity hop flavor and a full hop aroma. We use Nugget and Amarillo hops, and it is dry hopped with Falconers Flight.
Our Backyard Buzz is similar to our Downtown Brown ale, made with American hops combined with coffee, chocolate, and toffee notes. It is brewed with honey from our farmstead apiary, to give it a sweet and roasted flavor.
Strong, rich, hoppy and smooth, our Barley Wine is an American version with a high alcohol kick. Flavors of malt sweetness are quickly balanced by an assertive hop bitterness. Hop flavor and aroma are present as well, and the beer finishes with a fruity contribution from our house ale yeast.
Empire Belgian Dubbel has a dark ruby color with a medium mouth feel. Flavors of full malt, toffee, fig and plums are complimented by a subtle tart finish.
A light, crisp pilsner base flavored with blueberry puree and served with fresh blueberries afloat. This fruited ale is tart, refreshing, and very drinkable.
Full-bodied and dry, this stout has the flavor of fresh black cherries. It starts with chocolate and roasted barley flavors, and then finishes with a subtle cherry note. Tastes like a chocolate-covered cherry.
Chocolate Mint Stout
Brewed for the holiday season, this stout was made with dark Belgian chocolate, fresh mint leaves, and six specialty malts. This brew starts with the aroma of fresh peppermint, followed by the robust flavor of the chocolate, and finishes with a minty balance.
A Belgian style unfiltered wheat, this limited release was brewed with blended cranberries giving this beer a beautiful red hue. Lightly hopped and then fermented with a traditional yeast strain, this brew walks the line between sweet and tart, finishing crisp and dry. Available seasonally in NY.
Critz Apple Ale
Critz's Apple Ale is an American wheat beer with apple cider added prior to fermentation for a fresh, tart apple taste. The cider is produced by Critz Farm in Cazenovia.
The base of this beer is a strong Scottish Ale, with the addition of spice. Cardamom and allspice give this hearty brew a holiday aroma and flavor.
Empire Brown Ale
A delicious Brown Ale made with American hops & combined with some of the finest English specialty malts available. Rich coffee, chocolate, and toffee notes are balanced nicely with the fruity hops.
Our Saison is brewed to reflect the Belgian tradition. Unfiltered, hazy, spicy and earthy, this is extremely refreshing.
Empire State Pale Ale
This ale features an earthy hop note to round out the crisp and refreshing flavor of the Pale Ale. This brew is made with 100% New York State grown Cascade hops from Foothill Hops Farm in Munnsville, NY (Madison County).
Extra Special Bitter
Brewed in the style if a traditional Extra Special Bitter, we use English barley and NYS grown hops in this beer. A malty, medium bodied mouthfeel balances nicely with the earthy hops flavors and aromas.
Harvest Moon Raspberry Cider
Critz Farms' hard apple cider made with fresh raspberries. Sweet, tart, and light bodied.
A German-style unfiltered wheat beer brewed with authentic German yeast and malts. Banana and clove flavors are present, followed by a refreshing finish.
Hop Trail Ale
Hop Trail Ale is our interpretation of a pre-prohibition style ale to honor Madison County and its hop growing history. Made with two NYS indigenous hops called Prohibition from Pederson farms, and Heritage, from Foothill Hop farm. These hops were found growing wild and have be cultivated by these two farms over the past few years. We have also used NYS malt from Pioneer Malting in Rochester to make this beer 100% NYS ingredients.
Bocks and Doppelbocks are German-style lagers, usually released in the spring in celebration of the new season. Strong, full bodied and somewhat sweet, this beer was fermented with a traditional German lager yeast strain for over eight weeks.
Lost Dog Pale Ale is an American Style Pale Ale. It has an smooth, medium body with a solid hop aroma and a clean, dry, hoppy finish.
Pure amber maple syrup from Critz' Farms in Cazenovia rounds out the flavor of this traditional Dry Porter. It has a subtle aroma of maple syrup and just the right amount of sweetness.
This is a German style dark lager brewed with German pilsner, Munich, and Carafa Malts. Lagered for six weeks with a German lager yeast, it is crisp, clean, and malty with a hint of Noble hops.
An American IPA, heavily hopped with 100% Mosaic hops. This bright and juicy beer has a pleasant fruity aroma, with a nice dry finish.
NY State of Rind
NY State of Rind is a double IPA made with NYS Chinook and Nugget for bittering hops, and Falconers Flight for aroma. It is then steeped with dried grapefruit rind post fermentation. This gives the beer a bright grapefruit aroma, followed by a NYS hop bitterness, then a malt backbone and finishes with a grapefruit zest like flavor.
Our American IPA, hopped heavily w/ 6 kettle additions of Falconers Flight. It has a citrus aroma and a bright earthy flavor, with just the right amount of malt balance.
An unfiltered Belgian Golden ale, spiced with purple basil grown on the farms at Blue Hill at Stone Barns in Tarrytown, New York.
Roasted Pumpkin Ale
Our pumpkin ale is made with 250 lbs of pumpkins from Critz Farm in Cazenovia. The pumpkins are seeded, cut into pieces and roasted in our ovens until caramelized. They are dded into the mash, infusing the roasted pumpkin flavor into the beer. It is then lightly spiced with 5 traditional pumpkin pie spices: cinnamon, nutmeg, ginger, allspice, and clove.
Runway Rose is the official beer of Syracuse Fashion Week. Brewed with chamomile and rose hips, it has a crisp refreshing finish, and a stylish flavor. 6% ABV
Made with a traditional Scottish Ale yeast, this beer is sweet, strong, and rich, while maintaining an extremely balanced character.
Porter brewed with the addition of a German smoked malt. Medium bodied with a hint of smoke on the finish, this beer pairs well with BBQ and meat dishes.
Statewide Pale Ale
Statewide Pale Ale is a classic American style pale ale. Brewed in collaboration by the NYS Brewers association at Schmaltz Brewery in Clifton Park NY with 10 of NYS finest Brewmasters. This beer has a fruity hop aroma with artfully balanced hop flavors. NYS malted barley creeps into the palate with its signature earthy characteristic, and finishes dry and drinkable. The beer is dry hopped with NYS Cascade hops, giving it yet more of our home state terroir. 5.6% ABV
A unique beer--a cross between a Belgian farmhouse ale and a Belgian tripel. Tart like a farmhouse ale, sweet and strong like a tripel.
Empire Summer Ale is a Pilsner Style Ale made with 100% German Pilsner malt, and German Noble hops. It has a crisp clean flavor, and finishes with a hint of citrus from dried lemon peel that was steeped in the brew after the boil.
This Berliner Weisse style beer was kettle soured for 24 hours. It is very light with a tart and refreshing finish.
Thai Dragon Ale
A Belgian style Golden Ale spiced with locally grown organic Thai Basil. Light in color and medium bodied, this beer is herbaceous and surprisingly balanced.
Brewed exclusively for Toggenburg ski resort in Fabius NY, this spicy winter warmer style ale offers notes of Cardamom and allspice. Tog Grog will warm your bones 7.5% ABV
