Cheers to Skinny Atlas Light!


It’s #FlagshipFebruary and we’ll be toasting to Skinny Atlas Light all month long! Anything but trendy, our number one seller for a quarter century hasn’t earned it’s success by craft glitter or in vogue beer styling. This classic, light craft delivers big Kölsch character, weighing in at only 120 calories. Skinny is our most decorated recipe and founder David Katleski’s favorite pint. Simply put, this beer rocks but don’t take our word for it, grab a 6 pack or some farm fresh draft and judge our flagship for yourself!

Skaneateles Lake is the water source for Syracuse, New York and has been the lifeblood for all our hand-crafted ales and lagers since we opened shop back in 1994. Big Leg Emma 11.2%

We’ve got a big, bad new brewpub brew now on draft at both Empire locations! This limited edition brew wont last long, grab a pint while you still can but be careful… this beer bites back.

Named in homage of the band Big Leg Emma who played at our Empire State Brewing and Music Festival in 2008, this big legged, high octane brew leaves a lasting impression like great music. Madison County Cascade Hops, Belgian Abbey Yeast and a blend of four chocolate malts make for an intense Russian Imperial Stout. Flavors of chocolate, roasted coffee, and dark fruits will cover your pallet and eventually make way for the piney cascade hops.


Sweet Fire 2019

At a Brooklyn beer event in October of 2014, 5 friends decided to join forces in a unique beer collaboration by beer industry women. The brew was so successful that the tradition has continued each year since! Look for the 2019 batch, this year with more Belgian chocolate and a hint less chili.

Syracuse Brand Ambassador, Jocelyn Feldmeth, gives us the scoop on the brew: “Our additions of the five chili spice blend and coca nibs brought the perfect amount of chocolate sweetness on the initial taste with the chili powder giving it a fiery finish.  I am proud to be a part of this all-women craft brew.  Before I became the Brand Ambassador I was an assistant in the brewery and am grateful to Empire Brewing Company for making my dreams of being a brewer come true.  In a male dominated industry, our Sweet Fire Stout shows that women with ambition and innovative ideas can bring something new and exciting to the table.”

Sweet Fire is an imperial stout that is brewed and fermented with cocoa nibs and a special chili blend, giving it a tantalizing chocolate aroma and flavor with a heat that creeps onto the palate and builds into a beautiful balance of sweetness and spice, 8.2% ABV. The liquid is available at a limited release while supplies last.

The new Empire Farm Brewery opens in less than 3 months! Our growth over the past 20 years wouldn’t have been possible without the support of our local community and we couldn’t be prouder of our NYS partners. We are so thankful for the relationships that we’ve built and we look forward to making new friends along the way!


Feldmeier Brew Tanks

Manufacturing stainless steel processing equipment for over 60 years, Feldmeier Equipment Inc. based out of Syracuse, NY has produced large scale tanks for businesses across the country. Empire’s expansion became an opportunity for Feldmeier to build their very first brewhouse. Our new 60 BBL, fully automated brewhouse will be considered a showpiece for Feldmeier, helping them advance their reputation in the brewing industry. Complete with a mirror finish, this brewhouse is truly one of a kind. Of course the Brewery wouldn’t be complete without a state of the art bottling line, which we commissioned from Prospero Equipment, based out of Pleasantville, NY. The bottling line will process 60 bottles a minute!

Meadows Farm in Cazenovia, NY has been providing our downtown location with local beef for decades, and the Farmstead Brewery will be opening right across the street from their farm! Meadows Farms plans on increasing their herd in order to satisfy our growing needs, and in return their cows will receive a hot meal of our spent grain, fresh from the new brewery. Greyrock Farm in Cazenovia, NY is another local farm that Empire has been working with for years. With their own CSA (community supported agriculture) program, we have access to great local produce year round from Greyrock Farm. Ever tried our pig burger? You can thank Bostrom Farms Meat Market, based out of Stanley, NY for that tasty menu item.

Scott Ouderkirk Studios and River Road Farm have been providing us with local honey, but now they are providing us with the bees! The new Empire Farmstead Brewery will have its very own apiary, which has been maturing over the past year in Hammond, New York.

One of our favorite examples of local sustainability is the recent resurgence of hop horticulture. Madison County was actually the hop capital of the world pre-prohibition, and the development of our second brewery location has reinvigorated the industry. The Bineyard, Foothill Hops Farm and Pedersen Farms are a few of our neighborhood farms who will be providing locally grown hops for our handcrafted ales and lagers. We will also continue to source locally ground coffee beans from Cafe Kubal out of Syracuse, NY for our popular seasonal brew, Local Grind.

The brand new Empire Farm Brewery will be open in Cazenovia before the start of summer. We believe the addition of the brewery will continue to stimulate the local economy and serve as a powerful example of the ‘buy local’ mentality. Empire’s first ever Girl Scout Cookie beer pairing starts this Tuesday, March 8th and will run while supplies last. Don’t miss out on a chance to experience unique new flavors in your favorite Empire brews! Six beer and cookie pairings were expertly selected for you by Brewmaster Tim Butler. Each beer will come in a 6oz pour along with one cookie.

This Saturday, November 7th Empire will hold an event at the Brewpub announcing the release of the first ever Empire Mug Club! Everyone interested will receive a punch card, the first 50 people to return their card with all 15 punches will be inducted into the club. One pint equals one punch.

Members will get a special rewards card, and will receive a ton of great perks. Use the rewards card each time you make a purchase, for every dollar spent, one point is received. Fall Sampling Dinner




Empire’s Executive Chef, Matt Riddett, released a new autumn menu last week and we invited members of the media to test out our brand new dishes and craft beer cocktails! Guests included representatives from Syracuse Yelp, the New Times, Syracuse Women of Craft Beer, Syracuse First, NoExcuses Tours Inc., and the Jefferson Clinton. The company was great and the reviews were awesome!

Featuring nearly 30 local agricultural businesses, including 15 Central New York State farms, the brewpub continues to maintain its reputation for creative American cuisine while utilizing the freshest local ingredients possible. We will continue to offer our signature dishes like the Big Easy Gumbo, Tumbleweed Burger and Jambalaya, with complimentary offerings more resembling classic comfort foods of the fall harvest. Chef Riddett has crafted several exciting new dishes, including:

Cowboy Beef Stew
with braised beef tips, baby potato, and root vegetables in a rich demi-glacé, served with roasted corn salsa and blue corn bread

Southern Style Chicken and Biscuits
slow roasted and pulled rosemary chicken with carrots, celery, and peas in a rich gravy, served over buttermilk-pumpkin biscuits

Thai Pork Tenderloin
marinated and grilled, served with vegetable fried rice and topped with our Indonesian sauce

Owner and former Executive Chef, David Katleski, is excited about Empire’s 53rd new menu saying, “Chef Matt has really created a seasonal comfort menu to capture the flavors of our region while designing dishes that compliment our award winning beers”.
